Goan Chicken Xacuti Recipe

The Goan Chicken Xacuti is very popular and a lot of people want to know how to make the chicken xacuti. So I am providing herein the recipe for chicken xacuti. I have recently shared with you the Goan xacuti masala recipe; like I said earlier this is not a spicy recipe and so can be included in regular everyday Goan meals.
Chicken xacuti Goan recipe
Ingredients:
1 chicken, cut into medium or small pieces as per your taste
2-3 tspns ginger-garlic paste
salt to taste
2 onions, cut fine
2 tomatoes, cut into 1 inch cubes
2 potatoes, cut into 1 inch cubes
Curry leaves
2-3 tbspns oil
Xacuti masala
Coconut juice (optional)
Corriander leaves, chopped (optional)


Method:
  • Apply salt and ginger-garlic paste to the chicken and keep aside.
  • In a vessel or pressure cooker, fry the onion in oil and add the chicken with a tbspn or two of water.
  • Cook until done. I cook in the pressure cooker for 5 mins. or less on simmer after the first whistle.
  • Put the xacuti masala in a heavy pan and add some water depending on how thick or thin you want your chicken xacuti to be. You may also substitute the water with coconut juice.
  • Bring to boil and add the curry leaves, tomatoes and potatoes.
  • When the potatoes are cooked, add the cooked chicken.
  • Bring to boil and turn off the flame. 
  • Garnish with corriander leaves.
  • Serve hot with rice, pulao, chappatis or bread.

Beef Pork Chicken Stew

Stew made using chicken, beef and pork was served at the weddings some three decades back long before the buffet meals came into the picture. The pork, beef and chicken stew was served in a quarter plate with a triangular slice of bread, neatly trimmed and it was oh, so tasty. This tasty stew of three meats is not seen very often today and even if it is, might not bring back the memories of the stew of old.
Delicious Stew of Pork, Beef and Chicken
Ingredients:

¼ kg boneless pork
¼ kg boneless beef
¼ kg boneless chicken
5 carrots2 potatoes
15 round beans
1/2 cup green peas
1 capsicum
2 big onions, chopped
8 pepper corns
4 cloves
4" piece of cinnamon
1/2 glass milk
1 level tbspn corn flour
2 green chillies, slit
salt to taste
3 tspns ginger garlic paste
3 tspns salt or as per taste
6-8 tbspns of tomato ketchup
1 cup macaroni

Method:
  • Cut each of the three meats into one inch pieces and apply salt and ginger garlic paste keeping them separate.
  • Fry the onions in a pressure cooker, add cloves, cinnamon and pepper corns. Add a little water if required.
  • Add pork and cook till done.
  • Take out the pork, add beef and cook till done.
  • Take out the beef, add chicken and pressurize for 5 mins. after the whistle on simmer.
  • Dice the carrots, potatoes and capsicum.
  • Put all the cooked meats and the above vegetables along with the green peas in a vessel with the gravy if any.
  • In the milk, add the cornflour, stir and add to the mixture.
  • Add another glass of water, the green chillies and tomato ketchup or as per your taste.
  • If you would like some extra gravy you could add some chicken stock.
  • Stir occasionally and cook with lid on until vegetables are done.
  • Boil a cup of macaroni (for 6 to 8 mins in pressure cooker on simmer after whistle) and add to the above.
  • Your stew is ready to be served. Bon appetit!!

Chicken Soup

There is nothing better than a hot chicken soup to cure a common cold or whenever you are down with the flu. It is easy to make and very tasty, a hot favourite with kids and adults alike.
How to make Chicken Soup
Ingredients:
1 cup chicken curry pieces, de-skinned
1 clove
5 pepper corns
1” piece cinnamon
1 onion, cut fine
1 tomato, cut fine
A pinch of turmeric powder
A few leaves of spinach or the local vauchi bhaji, chopped fine


Method:
  • Apply salt to the chicken curry pieces and put in a pressure cooker with the clove, cinnamon and pepper corns and 3 cups water to place on fire.
     
  • When the pressure cooker whistles, turn the heat to simmer and put off after 10 min 
  • Strain the broth and keep aside.
  • Take off the flesh from the bones and keep aside. Get rid of the spices.
  • In the pressure cooker, put the broth, shredded chicken and add the chopped onion, tomatoes and vauchi leaves.
  • Add half a cup of macaroni or noodles as per your taste.
  • Boil for another 6 minutes after the whistle on simmer.
  • Add more water if required and salt to taste.
  • Dish out the chicken soup and serve hot.
