Meat Loaf Recipe

This easy meat loaf recipe is one that I got from a friend while at my second job. She got it from her neighbour. Sunita, thanks for this great recipe. Whenever I make this meat loaf, I think of you! You can serve this meat loaf with some salad if you wish but then most often I end up making meat loaf sandwiches so it works as a good sandwich spread. Meat loaf sandwiches with mayonnaise are pretty popular around here. Good to pack for school tiffin and makes a filling snack after playtime.
Meat Loaf Recipe
Ingredients:

½ kg beef mince
200 gms bacon mince
2.5 tspns salt
1.5 tspns pepper powder
2 eggs
2 slices bread soaked in water and squeezed out 
Corriander leaves, chopped (optional)
Ingredients for meat loaf
Method:
  • Mix all the ingredients together and put in a loaf tin or other suitable vessel.

Beef Cutlets

These beef cutlets are a real treat. Serve them with a salad or put them in a Goan pao or flat bread and enjoy! My late paternal aunt used to make these and this is her beef cutlet recipe. When I first started working most of the family including my mum went on holiday so I had gone to her for advice on how to make beef cutlets.
Beef Cutlets recipe
Ingredients:

1/2 kg beef (undercut) cut into slices perpendicular to the threads and about a cm thick.
2 teaspoons magic masala
2 teaspoons ginger-garlic paste
1 teaspoon salt
1/2 teaspoon sugar
2 tbspns vinegar
1 tbspn lime juice
2 green chillies cut fine
2 Onions – grated or cut into fine pieces
2 Tomatoes – cut into fine pieces
1 egg  
Semolina for coating
Oil for frying

Method:
  • Pound the beef slices with a tenderizing mallet or send them through a tenderizing machine.
  • Add all ingredients except the last six.

  • You may leave it to marinade in the fridge overnight.

  • Then add the next four ingredients and mix.

  • Coat with semolina and shallow fry on simmer in a non-stick pan with the lid on. 
  • Keep checking and turning till well done on both sides as shown in the picture.
  • Serve with salald, as a side dish or in a flat bread like you might have found at a road-side stall.

Beef Pork Chicken Stew

Stew made using chicken, beef and pork was served at the weddings some three decades back long before the buffet meals came into the picture. The pork, beef and chicken stew was served in a quarter plate with a triangular slice of bread, neatly trimmed and it was oh, so tasty. This tasty stew of three meats is not seen very often today and even if it is, might not bring back the memories of the stew of old.
Delicious Stew of Pork, Beef and Chicken
Ingredients:

¼ kg boneless pork
¼ kg boneless beef
¼ kg boneless chicken
5 carrots2 potatoes
15 round beans
1/2 cup green peas
1 capsicum
2 big onions, chopped
8 pepper corns
4 cloves
4" piece of cinnamon
1/2 glass milk
1 level tbspn corn flour
2 green chillies, slit
salt to taste
3 tspns ginger garlic paste
3 tspns salt or as per taste
6-8 tbspns of tomato ketchup
1 cup macaroni

Method:
  • Cut each of the three meats into one inch pieces and apply salt and ginger garlic paste keeping them separate.
  • Fry the onions in a pressure cooker, add cloves, cinnamon and pepper corns. Add a little water if required.
  • Add pork and cook till done.
  • Take out the pork, add beef and cook till done.
  • Take out the beef, add chicken and pressurize for 5 mins. after the whistle on simmer.
  • Dice the carrots, potatoes and capsicum.
  • Put all the cooked meats and the above vegetables along with the green peas in a vessel with the gravy if any.
  • In the milk, add the cornflour, stir and add to the mixture.
  • Add another glass of water, the green chillies and tomato ketchup or as per your taste.
  • If you would like some extra gravy you could add some chicken stock.
  • Stir occasionally and cook with lid on until vegetables are done.
  • Boil a cup of macaroni (for 6 to 8 mins in pressure cooker on simmer after whistle) and add to the above.
  • Your stew is ready to be served. Bon appetit!!

Beef Roast

This Beef Roast recipe uses a lot of onions and tomatoes so that the roast is one with gravy rather than a dry roast. This gives your beef roast sandwiches a wet feel so that you can eliminate the need for butter or mayonnaise if you are watching your weight. ;) 


Ingredients:
1kg roast beef chunk

3 big onions, chopped fine
3 big tomatoes, chopped fine
4" stick cinnamon
6 cloves
10 pepper corns
4 red Kashmiri chillies
2 tbspns ginger garlic paste
2 tspns salt or as per taste
1 tspn sugar
juice of 1 small lemon
3 tbspns oil

Method:
  • Apply salt, sugar, lime juice, ginger garlic paste to the chunk of beef and keep aside.
  • If you have time you can even marinate it and keep it overnight in the fridge.
  • Heat the oil in a pressure cooker.
  • Add the onions and fry for some time.
  • Add the tomatoes and continue frying.
  • Add the marinated beef chunk and pressure cook on simmer for about 40 mins. or until done.
  • Meat is best cut when it is cold rather than hot. Let cool and keep in refrigerator.

  • The next day, take out the beef roast and slice it perpendicular to the threads in the meat.
  • Use as a side dish, in salads or in sandwiches.

Beef Patties

Beef patties are a great snack to try and make at home. I got this recipe for beef patties from my SIL's sister who attended some course in baking.
 
Ingredients:
1 cup cooked beef mince

For the PUFF PASTRY:
All-purpose flour (maida) – 220 gms
Puff fat – 115 gms – for folding
Shortening (ghee) – 20 gms – for mixing
Salt to taste
Chilled water to knead the dough

Method:
  • Make a dough with the flour, salt and chilled water, knead in 20 gms shortening and clear the dough.
  • Relax the dough in a cool place for ½ an hour covering with a wet cloth. 
  • Sheet the dough in a rectangular shape. 
  • Spread 115 gms fat evenly on the dough sheet. 
  • Cut the sheet vertically in 7 or 8 strips in such a manner that each subsequent strip is broader than the preceding strip. 
  • Roll the first strip like a swiss roll. 
  • Keep this roll on the next strip and roll. 
  • Similarly, roll all the subsequent strips. 
  • Relax the folded dough for ½ hr. covered with a moist cloth in a cool place. 
  • Sheet the dough and cut into squares/rectangles. 
  • Put the beef mince filling and fold it, pressing lightly. 
How to make beef patties
  • Dust a baking tray lightly with flour .
  • Keep the beef puffs on the tray and apply beaten egg on top of the puffs. 
  • Bake at 220°C till golden brown.
