This wholewheat banana walnut loaf recipe is very popular in our family and is healthy as well. A good way of using up the overripe bananas that nobody wants to even look at.
Ingredients:
1 1/4 cups whole-wheat flour
1 teaspoons baking soda
1/4 teaspoon salt
1/2 cup butter, room temperature
1 cups sugar
1 cup mashed ripe bananas
2 eggs
1/2 cup chopped walnuts

1 cup mashed ripe bananas
2 eggs
1/2 cup chopped walnuts
Method:
- Mix the flour, baking soda, and salt. Set aside.
- In a bowl, beat together the sugar and butter until blended.
- Beat in the eggs and then beat in the mashed banana until completely mixed.
- Stir in the walnuts.
- Fold in the flour mixture until just incorporated.
- Grease a 9" round pan and pour the mixture in. You could use a loaf tin; I didn't have one.
- Bake at 170°C until a toothpick inserted in the center cones out clean.
- Allow to cool in the cake tin for about 10 minutes and then turn out onto wire rack so it cools completely.
