Fried Mendios (Pearl Oysters)

Fried mendios are a true Goan delicacy that is not freely available. I simply love these. You often find little pearls in them if you are lucky and many a time I have saved them to inset into a ring or other piece of jewellery.
Fried Mendios
Ingredients:
Mendios (pearl oysters)
a pinch of salt
a pinch of turmeric powder
a pinch of chilli powder
some semolina/rawa
oil for frying
fresh mendios before frying
Method:
  • Apply a little salt to the mendios.
  • Dip them in semolina to which turmeric and chilli powders have been added.
  • Shallow fry on both sides until done; do not make them crisp.
